4.5-ounce box spinach, frozen, thawed, squeezed out excess liquid
2 garlic cloves, chopped
1 tablespoon extra virgin olive oil
2 tablespoons flour
1 tablespoon freshly squeezed lemon juice
1 1/2 cups fat-free rooster broth
pinch of nutmeg
1 teaspoon dried oregano
1/2 teaspoon black pepper
1 cup low-fat cottage cheese stirred to an easy-to-use consistency
2/3 cup freshly grated Parmesan cheese, using the small holes on a grater
1/2 pound whole-grain pasta, such as falafel, macaroni, or spiral pasta.
